Miliproti - soft and delicious pastry, for all occasions.

Components:

700ml. milk,

1 cube of yeast,

1 teaspoon sugar,

2 whole eggs,

3 egg yolks,

2 tablespoons salt,

270ml. yogurt,

200ml. oils,

flour as needed.

Preparation:

In 700ml. of lukewarm milk crumble one cube of yeast, sprinkle with a teaspoon of sugar and leave for 5min. to add yeast.

Then, in a bowl for mixing the dough, beat 2 whole eggs and 2 yolks with a little wire.

Add salt, yogurt, oil and milk with yeast. Lightly connect the mixture with a wire,

add flour and knead until the dough begins to separate slightly from the hands.

Then pour 3 tablespoons of oil on the work surface, stretch it by hand into a circle slightly larger than the dough.

Raise the dough to about 20cm. height from the work surface and throw vigorously with your hands on the oiled work surface 50 times. Coat the work surface with oil aga

in and continue tossing the dough 50 more times. After that, you will get a soft and too smooth dough.

Return the dough to the mixing bowl, sprinkle with a little flour and cover with self-adhesive foil.

Leave to grow for an hour. When the dough doubles, make balls weighing 90g.

Then roll with your hands to get a roll-shaped dough about 30 cm long. Wrap the dough around three spread fingers,

stretch twice from the bottom inwards and pinch with your fingers from the bottom to join the dough.

Arrange in a baking tray lined with parchment paper and lightly coated with oil. Cover with self-adhesive foil and cloth. Leave to rise for about an hour to double the dough.

Whisk 1 egg yolk with 6 tablespoons of milk in a bowl with a fork. Brush the dough lightly with as much topping as possible and sprinkle with sesame seeds.


Preheat the oven to 150 ° C, bake for 10 minutes.

and then increase the temperature to 180 ° C and bake for another 20 minutes. Cover the baked milliprote with a nylon bag and then over a cloth. After 5min. you will have soft and delicious salty pastries ideal for all occasions.
